All ingredients are chosen in accordance with our production philosophy.

We use the produce of our own farm where possible, and what we don’t produce we source from carefully selected producers to ensure we use only the best local ingredients.

MEATS

Our hamburger patties are made from a painstakingly developed blend containing just the right proportion of fat.
We use “scottona” meat from young heifers, which is particularly tender and tasty.
The characteristic light marbling of fat melts during cooking, making our hamburgers particularly tender and juicy.

The best cold cuts in the region, all PDO and PDI certified, are thoroughly tested, tasted and chosen by the Santacatterina family with the care of those who know to process the highest quality ingredients.

CHEESES

Considered amongst the best in the world, our goat’s cheeses have won prizes at the International  Cheese Awards 2017.
As well as our own cheeses, we offer an excellent selection of the best Parmesan and Casera Stravecchio cheeses.

Polenta made from corn from our own fields.
The grain is stone ground, as tradition dictates.
Its creaminess is the main characteristic, bringing out its authentic, traditional taste.

BREAD

Organic sourdough bread, made with traditionally stone-ground Molino Sobrino flour.
Our wholemeal bread is made using only organic flour and a sourdough starter.
